Place pork and ¾ of the bottle of Drew’s Organic Smoked Tomato Dressing & Quick Marinade in a large resealable bag. Marinate for at least one hour, preferably longer and up to 24 hours, in the refrigerator.
Preheat oven to 350 degrees F. Place pork and marinade in a large glass baking dish. Roast for 45 minutes. Remove from oven and slice pork into 1 inch slices. Place slices back into baking dish in a single layer in the sauce and roast another 25, until internal temperature measures 145 (medium rare) – 160 (medium) F as measured in the thickest part of the largest slice of pork with a meat thermometer. Cooking time will vary based upon size of loin and thickness of slices. Remove pork from oven and flip slices over. Let rest about 10 minutes to let pork slices absorb the flavor of the sauce.
Before serving, drizzle remaining ¼ of the bottle of Drew’s Organic Smoked Tomato Dressing & Quick Marinade over the pork. Serve pork with a whole grain (like farro, quinoa or sorghum) and a seasonal vegetable. When plating, spoon sauce over pork, grain and vegetable.
